Gin takes tonic — Indian for a classic bittersweet serve, Dry Tonic for something crisper. Vodka works with soda water, tonic or ginger beer. Whisky and brandy are classic with dry ginger ale. Soda water is simply carbonated water — neutral, so it lengthens a drink without changing its flavour. Tonic water contains quinine, which gives it a distinctive bitterness, plus sweetener to balance it. That bitterness is what makes tonic the classic partner for gin, and it's why substituting soda for tonic produces a completely different drink.

Ginger ale is lighter, drier and more delicately spiced — the traditional partner for brandy and whisky. Ginger beer is fuller, cloudier and considerably more pungent, with real ginger heat, which is why it stands up to rum and vodka in a Moscow Mule or Dark 'n' Stormy.
