Sippify's rum range centres on Beenleigh Artisan Distillers, Australia's oldest continuously operating distillery: Double Cask, White, Australian Spiced, Gold and Traditional Liqueur, plus limited XO Rare and Tawny Barrel releases. There's also 23rd Street Signature Rum, Pacific Drifter spiced cane spirit and the overproof Inner Circle Navy Strength and Cask Strength rums.

White rum is unaged or lightly filtered, clean and bright — the base for mojitos and daiquiris. Gold rum has spent time in oak, picking up caramel and vanilla, and suits punches and mixed drinks. Dark and double-cask rums are aged longer for deep molasses, toffee and spiced oak, and reward sipping neat. Spiced rum has botanicals and spices added after distillation — Beenleigh's uses vanilla and aromatic spices, and is superb with ginger beer.

Navy strength refers to overproof rum, traditionally around 57% ABV — the strength at which spilled rum would still allow gunpowder to ignite, which is how the Royal Navy verified its rations hadn't been watered down. Inner Circle Green is a true navy strength at 57.2%, and the Black expression goes further at 75.9% cask strength. Both need careful measuring and reward a little water.

For white rum, the Daiquiri (rum, lime, sugar syrup) is the purest test of quality, and the Mojito is the crowd-pleaser. Gold and dark rums make an excellent Rum Old Fashioned or a proper rum punch. Spiced rum belongs with ginger beer and lime — a Dark 'n' Stormy style highball. Sippify stocks Cawsey's sugar syrup and Bickford's lime cordial if you're building from scratch.
